Banana Chocolate Granola


This recipe is super easy and it only requires one bowl, so you won't have to do a bunch of dishes!

This is one of my favorite granola recipes because it is sweetened with honey (or maple syrup for a vegan version).

You can make this for breakfast or a snack—either way it's delicious!


RECIPE:

Dry Ingredients:
  • 3 cups oats
  • 1 cup chopped almonds
  • 1 cup chopped banana chips
  • ½ cup chopped dates
  • 1 tsp. cinnamon
  • ½ tsp. ground anise seed
  • ½ tsp. salt
Wet Ingredients:
  • ½ cup melted coconut oil
  • ½ cup honey or maple syrup

Add-Ins:

  •  cup chocolate chips

Instructions:

  • Preheat the oven to 350F°
  • Prep your toppings by chopping the dates, walnuts, and banana chips into small chunks.
  • Combine all the dry ingredients and toppings in a medium-sized bowl (except for the chocolate chips!).
  • Pour in the melted coconut oil and honey (or maple syrup) and mix until everything is evenly coated.
  • Line a baking sheet with parchment paper and pour your granola on top. Using a spatula, flatten and press the granola together.
  • Bake for 21-23 mins or until golden brown. 
  • Sprinkle the chocolate chips on top while the granola is still warm so that it melts just a bit. Alternatively, you can wait to add the chocolate chips until the granola is completely cooled.

Tips:
  • If you don't want to use nuts in your granola, you can exchange that 1 cup of nuts for 1 cup of oats or one of your favorite add-ins.
  • If you want lots of clusters, pack your granola in tightly before baking. When your granola is done baking, allow the sheet to cool for 1 hr and then break it up into chunks using your hands.
